The excellence of the most traditional Mediterranean cuisine together with the most innovative proposals of the new cuisine spice a rich variety of dishes and natural products in the gastronomy of the municipality

Velez cuisine offers a rich variety of flavours of Phoenician and Arabic origin, mostly based on wine and olive oil. You cannot miss dishes as popular as “pescaito frito” (deep fried fish), sardine skewers, “ajobacalao” (cod with garlic), fried pumpkin with black pudding, the refreshing “ajoblanco” (cold garlic and almonds soup) and many more.

 

The most popular dishes are:

Served Hot:

  • Pumpkim stew
  • Gachas (gruel)
  • Berza (kale stew)
  • Ropa vieja (variety of cabbage, potatoes, green beans, chick peas, pumpkin, aubergine and meat, some people also add pig fat and a pig snout)
  • Cabbage stew
  • Migas (fried breadcrumbs with sausage)
  • Cod with honey piesMaimones (fried garlic with bread which has been boiled in water and sprinkled with sugar. There is a variety that includes onion, pepper and tomato)Cachorreñas (fish soup with orange flavour)
  • Baked sweet potatoes
  • Fritura de pescado (deep fried fish mixture)

 

Served cold:

  • Gazpacho (tomato, green pepper, bread and onion soup),
  • Ajoblanco (garlic and almonds soup)
  • Ajobacalao (cod with garlic which is especially cooked at Easter week)
  • Chambao (cucumber, onion, tomato, olive oil, vinegar and salt)


Confectionary:

  • Roscos de vino (wine donut)
  • Mostachones (cinnamon, eggs, sugar and refined flour pies)
  • Tortas de aceite de Velez (pies with anise, sugar, olive oil, etc.)
